Being the daughter of a nanny, i believe that you should give her extra compensation. I mean for her this is not going to be a vacation, it is a job. This means that she is there to get paid. I mean imagine if your boss sent you to europe and told you, you will be working, free of board etc etc, but you will not be paid anything. That would be unfair wouldn’t it?
So yes she should be paid, because she will be working, not on vacation. Also think about it as being vacation time that could of be instead used by her to spend time with her family.

I am a nanny and if the family asked me to travel to take care of their child for them I would expect to be paid. I think that $50 a day would be fair, if she will have the 8 month old all day. If she will only be in charge of her care for several hours out of each day, I would pay her $7-10 per hour. I hope this helps..enjoy your trip
