Obviously, camera(s), how many is entirely up to you. There are some companies that offer hosting and monitoring service for you, much like what you would use for your home security system. However, there is the other option of doing it all yourself.
Do not let the latter strike fear, as it is a lot simpler to do than one might think. Doing a quick search for web based video monitoring and you get a (for the lack of a better word) grand list of options for you to try.
As for the camera type, you are really going to want to go with one that has no need for a PC to function (own built in server), were you basically plug in the Internet connection and your there (of course there are some configuration steps to go through, but said items do come with the necessary manuals). Unfortunately these can get pricey as you include more and more cameras.
As an example for the alternative where a PC is on location, LookC Ltd., out of the UK, sells several options, mainly aimed at full blown security, but they can easily be adapted for the purpose that you are needing it for.
As for sound…hrmm…I honestly do not think that you can include sound in this method…but a further search into web based monitoring could prove me wrong on that.
